COUNTRY – STYLE PEPPERS IN OLIVE OIL
faithful to an ancient Apulian recipe , the peppers are harvested when fully ripe and become bright yellow or red.. They must be firm, fleshy and sweet. Only intact peppers are used. They are washed, the seeds removed and then hand cut into large pieces, blanched in water with vinegar and salt. They are generously srinkled with with capers and parsley, covered with olive oil and canned. The peppers are ideal as a side dish, with meat dishes, they can enrich fresh salads or they can be used to prepare tasty appetizers.
WHOLE ARTICHOKES IN OLIVE OIL
Artichokes , in all their varieties, are extraordinarily rich in nutritional properties, as well as one of the most delicious vegetables that nature offers us. Our artichokes, carefully selected, are processed fresh after being picked during the spring season, trimmed, hand-cut, the otugh outer leaves are eliminated by hand, blanched in water with vinegar and salt, and placed in jars, sprinkled with fresh herbs covered in olive oil. The entire process respects totally the ancient Mediterranean recipes and brings the flavours of the past to today’s consumers.

LONG STEMMED ARTICHOKES WITH WITH LAUREL AND BLACK PEPPER
Fresh cardetti artichoke hearts, blanched in water and vinegar and preserved in olive oil. Artichoke plants have a life span of four years. The Cardetto is the fruit that the plant produces in the first 6 months. The artichoke is preserved with part of the stem, and sprinkled with a few grains of black pepper and bay leaves.
"BELLE di CERIGNOLA" OLIVES
"Bella di Cerignola" is a variety of olives which grows only in Apulia. The olives are harvested in September / October, they are then put through a sweetening process and natural fermentation. When the fermentation has reached the right degree, the olives are put in jars, covered in water and salt without the addition of preservatives or dyes and pasteurized using a bain-marie procedure. They are delicious served before meals, to accompany drinks and snacks and they are great for preparing snacks.
Dried tomatoes IN OLIVE OIL
The tomatoes are picked at the height of ripeness (July and August), washed, cut and dried in the sun sprinkled with salt. Subsequently, they are washed and blanched in water with vinegar, seasoned with salt, pepper, oregano and fresh basil; stored in olive oil.
EGGPLANT SLICED IN OLIVE OIL
Eggplant is one of the most popular ingredients used in the tasty Apulian recipes. It’s found in first courses, in the preparation of side dishes or in delicious preserves. The recipe used for its preparation is typical of traditional Apulian cuisine.. In fact, is prepared from eggplants harvested when fully ripe, firm, sweet and with a minimum amount of seeds. . Eggplants are hand-peeled, marinated in water with vinegar and salt, sprinkledwith fresh herbs (mint and chili) placed in jars and covered with olive oil. It is quite appealing as an appetizer or to accompany meat dishes.
GRILLED MUSHROOMS IN OLIVE OIL
The mushrooms are grown in mushroom beds placed in natural tufa caves where they find the best conditions for their growth. They are hand-picked when they are meaty, firm and while the crowns closed, washed, blanched in water with vinegar and salt; they are charcoal grilled, then sprinkled with parsley, hot peppers, placed in jars and covered in olive oil. These grilled mushrooms are perfect as an appetizer or side dish, as well as an ingredient in recipes for first or second courses.
