Our tomato preserves contain mainly tomatoes grown by local producers. The varieties to be used and the harvesting period are factors which are discussed yearly with the producers. The tomatoes are hand-picked when they are at the right point of ripeness.
TOMATO SAUCE 700g

Firm, red, intact tomatoes, grown in the Apulian countryside, sun-ripened and harvested in August,, are what are used to make our delicious and fragrant pelati. The freshly picked tomatoes are selected, washed and peeled by hand, They are then canned with the addition of fresh basil leaves that enriches them and gives the preserves an inimitable flavour. They are then covered with salted water and canned in glass jars. They are an essential ingredient in preparing soups, meat alla pizzaiola recipes and are an ideal addition to fish stew. They are used to flavour soups, vegetables, and are essential when preparing a light sauce to add to pizzas. Drained and sautéed quickly they are used to prepare a sauce with olive oil, garlic and the final addition of a few leaves of fresh basil.
PELATI [PEELED TOMATOES] WITH BASIL
Tomatoes grown in the Apulian countryside and sun-ripened in August, intact and completely red, are used to make our delicious and fragrant peeled. As soon as they are harvested, they are selected, washed and peeled by hand. They are then canned in glass jars in their own sauce. The final addition of fresh basil gives them a unique scent. The "Peeled with basil" are also called "sauced", “Pelati con Basilico salsati” differ from the “Pelati con Basilico al natural” because preserved in their own sauce. This makes them an ideal ingredient in preparing delicious sauces such as tomato and basil sauce, tomato and mushroom sauce or all'arrabbiata, which has the addition of hot peppers.
It 'a typical product of the town of Bisceglie that brings back to mind ancient traditions. This delicious spread was a typical farmer’s breakfast on cold winter mornings. It was spread chunks of bread and after adding a few drops of extra virgin olive oil, it was eaten before going to work. The preserve is prepared with tomatoes, onions, red pepper, basil, fresh parsley, olive oil. The ingredients are then slowly cooked until it becomes a thick sauce. It can also be used as an delicious topping for pasta.
CHERRY TOMATO SAUCE
This tomato sauce goes hand in hand with the traditional sauce. It is made with cherry tomatoes freshly picked and processed according to the ancient traditions of Apulia. The tomatoes are washed then cooked, drained and reduced to pulp. It's a unique process, which preserves all the tastiness and nutritional values of tomatoes. It’s the basic ingredient for the preparation of sauces and meat sauces but, unlike the traditional tomato sauce, it has a sweeter, more intense flavor due to the higher level of sugar which is typical of cherry tomato.
